Husband and wife team Alex & Eloise Windebank are the hands behind the bakery.
Alex is a British Chef (formerly of Michelin Starred The Sportsman, UK and Michelin recommended The Plough) who has been running kitchens, shucking oysters and making beautiful food for over 15 years.
Eloise (formerly Polpo GM, UK) runs the Front of House, makes cocktails and has an encyclopedic knowledge of Bourbon.
They like wine, butter & running restaurants.
