Breezy Brew

Most Kombucha Breweries are from humble beginnings and we are no different.
It all started with a bored housewife and mom who spent all day enjoying tea parties (or that was the husband’s conception of her leisurely days). The bored housewife had to make a plan to stay healthy despite the vast volumes of cake and coffee consumed during abovementioned tea parties. The housewife started looking at recipes that would benefit the health of the family but unfortunately no substitute for sodas, juices and sugar-laden beverages were found. Then one day with the help of one funky green granny, our healthy beverage journey started with the arrival of our first SCOBY…
“What is that thing?” asked the hubby, upon entering the homestead. “It is a SCOBY”, I replied, “a symbiotic colony of bacteria and yeast and I’m going to use it to brew Kombucha.” “Kom – what??!” “Kombucha. It is a healthy fermented drink made with tea, sugar, bacteria and yeast. Kombucha tea is made by adding the colony to sugar and tea, and allowing the mix to ferment. The resulting liquid contains vinegar, B vitamins and a number of other chemical compounds.”
With severe misgivings he tasted the first brew 2 weeks later and was pleasantly surprised. His enthusiasm grew when I pointed out the purported health benefits:

So our Kombucha brewing journey started and eventually the husband looked at the housewife over a nice glass of sparkling freshly brewed Kombucha tea and said, “You know, we should bottle this stuff and sell it.” And so we did.
