Moroccan cuisine is a feast for the senses – a delicate journey that combines subtle spicing, light chilli and a variety of other choice ingredients to create an array of unique flavours.
TAJINE offers you a small yet prime selection of the authentic tastes of Morocco, whilst our emphasis is on the ancient methods and flavours of the indigenous ‘Berber’ people of Maghreb.
We have included Arabic, Persian, French, Spanish and even Greek influences that prevail in modern Morocco today.
The invading Arabs of the 7th century brought saffron, citrus, almond, rice and cane sugar to the Moroccan region. Through the influence of ancient Persia, the courts of the Caliphs of Baghdad, medicine, agriculture, architecture, spices and poetry flourished.
Organic cinnamon, paprika, turmeric, saffron, coriander, cumin, ginger, cardamom and mint are blended into TAJINE’S unique Ras-el-Hanout. Pure rose and orange blossom are used liberally, replicating the fine flavours reminiscent of the palaces of Fez, Rabat and Marrakesh.
